  • 50 g of finely grated Parmesan cheese
  • 40 g butter
  • 40 g of wheat flour
  • 400 ml milk
  • salt
  • a pinch of nutmeg

Melt butter in a saucepan.

Stir in the flour and cook, stirring constantly, for 1 minute.

Heat till you see bubbles.

Remove from heat. Add milk, don't forget to stir all the time, till the mass is smooth. Put the saucepan back and warm up for another 5 minutes, until the sauce thickens.

Add grated cheese, nutmeg, salt to taste and stir again.

Medium-thick and creamy Béchamel is ready-to-use!
