Combine all the ingredients for the dough in one bowl and grind them into crumbs.

Make a dough ball, wrap in plastic and put into the refrigerator for 30 minutes.

Thinly roll the dough on baking parchment. Put the plate on the dough and cut the extra dough over it. Use scraps to cover cracks and holes (if they appear :).

Peel apples, remove the core, cut into thin slices and lay in the center of the circle of dough. Sprinkle apples with a mixture of sugar and cinnamon.

Fold the dough edges to the center. Transfer the galette along with the parchment to the baking tray and bake in a preheated oven (180ºC/350ºF/gas 4) for 40-50 minutes.
